I have a member going on leave for the summer with no access to Email and would like to suspend all Notifications from Groupanizer during that time.. Is there a way to suspend all notifications for just one member?

No it will not. Notifications from the site and emails from a mailing list are two separate things. Only way to stop the mailing list emails would be to somehow temporarily remove them from whatever Contacts List, Subgroup, Section or Role they're assigned to that's included in that mailing list(s) involved.
